Want energy with your fish?

We were recently treated to delicious salads at Mike van de Elzen’s Auckland eatery Boy and Bird, and his very yummy ‘Wake up Shake’.

Boy and Bird, and Mike’s recently-released cookbook Fast, are based on the concept of quick and healthy food that kids and the whole family will like. The restaurant and the book have come after Mike and his family’s switch to eating better, getting more exercise and living a more balanced lifestyle, and switching to ecostore products at home.

We’re great fans of food that helps make life healthy and simple, so thought we’d share a couple of recipes that make a delicious combo and give you an energy boost at the same time.

Hapuka steak

Prep time 10 minutes

Cooking time 20 minutes

  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tbsp fennel seeds
  • 2 large hapuka steaks (400g each)
  • 1 tbsp olive oil

Preheat oven to 180°C. Toast seeds in a hot frying pan until fragrant, then crush to a fine powder in a mortar and pestle. Coat hapuka with spice rub. Heat oil in a frying pan and sear steaks — one minute on each side. Bake in oven for 20 minutes. Allow to rest for five minutes.

Energy salad

Prep time 15 minutes

  • ¾ cup natural almonds
  • 2 cups grated carrot
  • 1 cup grated fresh beetroot
  • 1 apple, peeled and diced
  • 2 cups cooked buckwheat
  • 3 tbsp chopped mint
  • Juice of ½ lemon
  • Pinch of salt

Toast almonds in a hot frying pan for 3–4 minutes, then coarsely crush in a mortar and pestle. Combine all ingredients in a serving bowl and toss to combine.
